Raisin Spoon Sweets (Σταφίδα Γλυκό του Κουταλιού)

Sweet, lemony Raisin Spoon Sweets make an excellent topping for yogurt to serve as a simple dessert. For Christmas presents, I’m making Raisin Spoon Sweets accompanied by copies of the Lemon-Raisin Yogurt Cake recipe. If you’re making Raisin Spoon Sweets as an ingredient for Lemon-Raisin Yogurt Cake, don’t worry if the syrup is slightly overcooked.
1 1/2 cups sugar
3/4 cup water
2 4” pieces of lemon peel
1/3 cup lemon juice
3 cups golden raisins
Boil sugar and water with lemon peel until it reaches 235° – 240°F on a candy thermometer, or until syrup forms a soft ball when dropped into a bowl of cold water. Stir in lemon juice and raisins and cook for 5 minutes. Let cool and spoon into sterilized jars.
