Serves 4
If the sauce is made ahead, Pan-Fried Tofu with Cilantro, Parsley and Basil Sauce, paired with sliced fresh tomatoes, makes a quick and easy lunch. It’s fresh, light, and packed with flavor, yet takes only ten minutes to make.

1 pound extra firm tofu
Salt
Freshly ground black pepper
1 Tbsp. olive oil
1 Tbsp. dark sesame oil
1 recipe Cilantro, Parsley and Basil Sauce

Slice tofu into 12 slices, 3/8” thick.  Season tofu slices on both sides with salt and freshly ground black pepper.

Heat olive and sesame oils in heavy frying pan until they’re hot, but not smoking. Turn heat to medium high, and add tofu. Cook for 2-3 minutes, or until underside of tofu is nicely browned. Turn over and cook for 2-3 minutes, or until second side of tofu is browned.

Plate three tofu slices per person and drizzle with Cilantro, Parsley and Basil Sauce. Serve immediately.
